I'm no expert in aerodynamics, but I can say this.
Large birds have to run along the ground for some distance in order to generate enough energy to get up in the air. This is simply because they are larger and heavier, so their buoyancy (ability to get up into the air with minimal effort) is limited.
Smaller birds, on the other hand, can usually take off from a standstill, since they are lighter and so less is needed to support them. it's quite basic, really.
2. Large birds, such as vultures, do need to flap their wings, albeit occasionally, because they take advantage of rising columns of air called thermals- this keeps them aloft, and their proportionately larger wings create more of a surface area for the air to get underneath. Smaller birds, on the other hand, need to flap their wings frequently because they have proportionately larger bodies in relation to wing size, and the volume of air beneath them keeping them up is significantly reduced.
3. All birds have characteristic flight patterns, although they display remarkable feats during courtship. Geese and some other birds fly in a V formation and frequently the leader swaps with the other members so everyone gets their turn at the front- there is less drag there. Minimising drag is the main reason for these formations.
